Kalinga Alamid coffee (also known as Kopi Luak or Kopi Luwak in Indonesia), comes from high in the mountains of the Kalinga region of the Philippines and is one of the rarest, most sought-after coffees in the world. The Palm Civet (known as an Alamid or Musang in the Philippines) eats coffee cherries. The beans then pass through the digestive tract undigested and are eliminated. During this process some of the proteins in the beans are broken down, making the coffee much less acidic and delightfully smooth, while imparting a delicate caramel aftertaste. The beans are then collected, washed in pure mountain spring water, and dried in the sun. No pesticides or chemicals are used. |
