This is a fun one from the Central Valley. Costa Ricans are typically the archetype of a washed coffee — clean, bright, consistent. The Perla Negra is something else: a big, fruity natural closer to an Ethiopia than a typical Tarrazú. Perla Negra is the name Las Lajas gave to their own process — a very precise, longer (up to 30 days) adaptation of a natural process; they brix-test the cherries to select for the highest sugar content, dry them in the sun, rest them in shade, then finish in a greenhouse.

ECUADOR SIDRA Finca Terrazas del Pisque

Sidra is a variety native to Ecuador, likely a Bourbon-Typica cross, though there's some evidence it may be a hybrid developed by Nestlé (nobody seems to be sure). It's a pretty new variety, at least in the specialty market, but we are starting to see more of it as it produces a great coffee, very dense and interesting, especially for a washed coffee like this one. From the Pichincha region, 2100 meters.
