Varietal: Pacamara
Process: The harvest takes between 15 and 18 days and is done manually by the family and the neighborhood. Pulping is carried out immediately, left in the fermentation tank for an average of 36 to 48 hours. It undergoes traditional washing and is dried in the sun for 10 to 15.

This is a CRAZY new microlot from Campo Hermoso in Quindío. This one is different. I have never had anything quite like it. I don't know if I would drink this every morning for breakfast, but you have to try it!

Varietal: Castillo, Caturra
Fermentation in cherry for 72 hours. Pulping. Second fermentation in tank with the mosto obtained from the first fermentation and an addition of citrus fruit infusion for a further 72 hours. Drying without washing in the sun for approximately 25 days to obtain a black honey.
